1. Prepare the dough: Pour the warm water into a large bowl and add the salt. Gradually add the P.A.N. corn meal, mixing continuously with your hands until a soft and smooth dough forms.

2. Let it rest: Leave the dough for about 5 minutes so the corn meal can fully absorb the water. If it feels too dry, add a little more water.

3. Shape the cakes: Divide the dough into 6–8 portions. Roll each portion into a ball and gently flatten it into a small round cake, approximately 1–1.5 cm thick.

4. Cook until golden: Heat a little butter or oil in a frying pan over medium heat. Cook the corn cakes for approximately 5–7 minutes on each side, until golden and lightly crispy.

5. Prepare the eggs: While the corn cakes are cooking, prepare your eggs as you like them – fried, scrambled, or poached. Season with salt and black pepper.

6. Prepare the toppings: Slice the avocado and prepare the cheese, salsa, beans, fresh coriander, and lime.
