Kheer is a traditional Indian dessert made by slowly cooking rice in milk until it becomes creamy and rich. Flavoured with cardamom and garnished with nuts, this comforting sweet dish is perfect for festivals, family celebrations, or as a delicious dessert after any meal.

Ingredients
1 litre full-fat milk
¼ cup basmati rice (washed and soaked for 20 minutes)
¼ cup sugar (adjust to taste)
¼ tsp ground cardamom
2 tbsp chopped almonds
2 tbsp chopped pistachios
1 tbsp raisins (optional)
A few saffron strands (optional)
How to Cook (Step-by-Step)
1. Boil the Milk
Pour the milk into a heavy-bottomed saucepan and bring it to a gentle boil over medium heat.
2. Add the Rice
Drain the soaked rice and add it to the boiling milk. Stir well.
3. Simmer
Cook on low heat for 30–35 minutes, stirring frequently to prevent the rice from sticking. The rice should become soft and the milk should thicken.
4. Add Sugar
Stir in the sugar and cook for another 5 minutes until fully dissolved.
5. Add Flavour
Mix in the cardamom powder, saffron (if using), raisins, and half of the chopped nuts.
6. Finish
Remove from the heat and let the kheer cool slightly. It will continue to thicken as it cools.
How to Serve
Serve the kheer warm or chilled, garnished with the remaining chopped almonds and pistachios. For extra richness, decorate with a few saffron strands or edible rose petals. Kheer pairs beautifully with festive Indian meals and is a favourite dessert for celebrations and special occasions.
