Kulfi Falooda is a rich and refreshing South Asian dessert made with creamy kulfi (traditional Indian ice cream), silky falooda sev, sweet basil seeds, rose syrup, and chilled milk. Ingredients
For the Kulfi
a) 1 litre full-fat milk
b) 200 ml condensed milk
c) 4 tbsp sugar
d) 1/4 tsp cardamom powder
e) 2 tbsp chopped pistachios
f) 2 tbsp chopped almonds
g) Few saffron strands
For the Falooda
a) 1 cup falooda sev/vermicelli
b) 3 tbsp rose syrup
c) 2 cups chilled milk
For Garnishing
a) Chopped nuts
b) Rose petals (optional)
c) Tutti frutti or jelly cubes (optional)
d) Extra rose syrup
How To Make
Step-by-Step
1. Prepare the Kulfi
a) Heat full-fat milk in a heavy-bottom pan.
b) Simmer on low flame until reduced to almost half. Stir frequently.
c) Add condensed milk, sugar, saffron, and cardamom powder.
d) Mix in chopped nuts and cook for another 5 minutes.
e) Let the mixture cool completely.
f) Pour into kulfi moulds and freeze for 6–8 hours or overnight.
2. Cook Falooda Sev
a) Boil water in a pan.
b) Add falooda sev and cook until soft.
c) Drain and rinse with cold water to prevent sticking.
d) Refrigerate until chilled.
3. Assemble the Kulfi Falooda
a) Add rose syrup to the bottom of a tall serving glass.
b)Add cooked falooda sev.
c) Pour chilled milk gently.
d) Place kulfi on top or slice it into pieces.
e) Garnish with nuts, rose syrup, and optional jelly or tutti frutti.
How to Serve
a) Serve immediately in tall chilled dessert glasses.
b) Best enjoyed cold during hot weather or after spicy meals.
c) Pair with extra rose syrup or dry fruits for a richer presentation.
