Ingredients
For the Baby Corn Batter
a) 250 g baby corn (cut into halves or bite-size pieces)
b) 3 tbsp Corn Starch
c) 3 tbsp all-purpose flour (maida)
d) ½ tsp ginger-garlic paste
e) ½ tsp black pepper powder
f) ½ tsp salt
g) Water (for batter)
h) Oil (for frying)
For the Manchurian Sauce
a) 2 tbsp oil
b) 1 tbsp garlic (finely chopped)
c) 1 tbsp ginger (finely chopped)
d) 2 tbsp spring onions (chopped)
e) 1 small onion (finely chopped)
f) 1 small capsicum (chopped)
g) 1 tbsp soy sauce
h) 1 tbsp chili sauce
i) 1 tbsp tomato ketchup
j) ½ tsp black pepper
k) Salt to taste
l) 1 tsp sugar (optional)
For Gravy Version (optional)
a) 1 tbsp corn flour mixed with ½ cup water (slurry)
How To Make
Step-by-Step
1. Prepare the Baby Corn
Wash the baby corn and cut them into halves or bite-size pieces.
2. Make the Batter
In a bowl, mix corn flour, all-purpose flour, ginger-garlic paste, pepper, salt, and water to form a smooth batter.
3. Coat the Baby Corn
Add the baby corn pieces to the batter and mix well so they are evenly coated.
4. Fry the Baby Corn
Heat oil in a deep pan and fry the coated baby corn until crispy and golden brown. Remove and place on paper towels.
5. Prepare the Sauce Base
Heat 2 tbsp oil in a wok or pan. Add chopped garlic and ginger and sauté until fragrant.
6. Add Vegetables
Add chopped onions and capsicum. Stir-fry for 2–3 minutes on high heat.
7. Add Sauces
Add soy sauce, chili sauce, tomato ketchup, pepper, salt, and sugar. Mix well.

Add the corn flour slurry and cook for 1–2 minutes until the sauce thickens. Then add the fried baby corn and mix gently.
