The Crunchy Spicy California Roll is a delicious twist on the classic California Roll. This version combines creamy avocado, crisp cucumber, and shredded imitation crab tossed in a spicy Kewpie mayo blend. Rolled with seasoned sushi rice and nori, it’s finished with a golden panko crust for a satisfying crunch in every bite. Ingredients

  • Sushi rice

  • Seasoned rice vinegar (sushi vinegar)

  • Kewpie mayo

  • Sriracha

  • Togarashi (Japanese chili seasoning)

  • Kani kamaboko (imitation crab sticks)

  • Avocado (ripe, sliced)

  • Cucumber (julienned)

  • Nori seaweed sheets

  • Panko bread crumbs

  • Neutral oil (vegetable or canola)


How to Make

1. Cook and season the rice

  • Rinse sushi rice until water runs clear.

  • Cook in a rice cooker or stovetop pot.

  • Fluff gently and transfer to a bowl.

  • Fold in seasoned rice vinegar while warm, then fan until cooled.

2. Toast the panko

  • Heat neutral oil in a skillet over medium heat.

  • Add panko bread crumbs and stir until evenly golden brown.

  • Transfer to a bowl and let cool.

3. Make the spicy crab filling

  • In a small bowl, mix Kewpie mayo, Sriracha, and a pinch of togarashi.

  • Shred kani sticks with two forks and toss with the spicy mayo mixture until well coated.

4. Prepare the sushi roll

  • Place one sheet of nori (rough side up) on a bamboo mat or plastic wrap.

  • Wet hands and spread a thin layer of sushi rice over the nori.

  • Sprinkle toasted panko on top and press lightly.

  • Flip the sheet so the nori faces up.

5. Add fillings and roll

  • Layer spicy crab, avocado slices, and cucumber strips across the center.

  • Use the bamboo mat to roll tightly, pressing gently to shape.

6. Slice and serve

  • Slice the roll into 8 even pieces with a sharp knife.

  • Sprinkle with extra toasted panko for added crunch.
