Mexican Rice, also known as Arroz Rojo, is a flavourful, tomato-based rice dish that’s a staple in Mexican home cooking. Lightly toasted rice simmered with tomatoes, garlic, and warm spices creates fluffy grains packed with bold, comforting flavour. It’s the perfect side for tacos, burritos, grilled vegetables, or enjoyed on its own.
Ingredients
a) 1 cup long-grain white rice
b) 2 tbsp vegetable oil
c) 1 small onion, finely chopped
d) 2 cloves garlic, minced
e) 1 cup tomato puree or crushed tomatoes
f) 2 cups vegetable broth (or water)
g) ½ tsp cumin powder
h) ½ tsp paprika
i) Salt to taste
j) Fresh coriander (optional, for garnish)
Optional add-ins: peas, corn, diced carrots, or green bell peppers.
How To Make
Step-by-Step
1) Rinse the rice
Under cold water until the water runs clear. Drain well.
2) Heat oil
In a pan on medium heat. Add rice and toast, stirring gently, until the grains turn lightly golden.
3) Add onion and garlic
Onion and garlic and sauté for 1–2 minutes until fragrant.
4) Stir in tomato puree
Stir in tomato puree, cumin, paprika, and salt. Cook for 2 minutes.
5) Pour in vegetable broth
Pour in vegetable broth, mix gently, and bring to a boil.
6) Cover and simmer
Cover and simmer on low heat for 12–15 minutes, until the rice is cooked and liquid absorbed.
7) Rest & fluff
Switch off heat, let rest covered for 5 minutes, then fluff with a fork and serve hot.
