Pad See Ew is a classic Thai street food dish made with wide rice noodles stir-fried in a smoky wok. It’s known for its rich soy sauce flavor, slight sweetness, and that signature charred “wok hei” taste. Comforting, quick, and deeply satisfying.
Ingredients
a) 250 g wide rice noodles (fresh or soaked dried noodles)
b) 200 g chicken / tofu / shrimp
c) 2 cups Chinese broccoli (or regular broccoli/Kai-Lan)
d) 3 cloves garlic (minced)
e) 2 tbsp dark soy sauce1 tbsp light soy sauce
f) 1 tbsp oyster sauce
g) 1 tsp sugar
h) ½ tsp white pepper
i) 2 tbsp oil
How To Make
Step-by-Step
1.Prepare noodles
If using dried noodles, soak until soft. Fresh noodles—separate gently.
2.Make sauce mix
Combine dark soy sauce, light soy sauce, oyster sauce, sugar, and white pepper.
3.Heat the wok
Use high heat. Add oil and sauté garlic until fragrant.
4.Cook protein
Add chicken/tofu/shrimp and stir-fry until cooked through.
5.Add eggs
Push everything aside, crack eggs, scramble lightly, then mix in.
6.Add vegetables
Toss in Chinese broccoli and stir-fry for 1–2 minutes.
7.Add noodles + sauce
Add noodles and sauce mix. Toss well so noodles absorb the flavor.
8.Get the char (important!)
Let noodles sit briefly on high heat for slight caramelization (don’t over-stir).
How to Serve
a) Serve hot straight from the wok for best flavor.
b) Garnish with chili flakes or fresh lime (optional).
